ENJOY COOKING WHILE STUCK AT HOME!
Today they declared a shelter-in-place order for the Bay Area. You have to stay home except for essential shopping, like at the grocery or pharmacy, and all the restaurants are closed except for deliveries and take out food.
Our neighborhood grocery store was super crowded after this announcement. Most of the people in the Bay Area have to cook at home more often than usual for at least 3 weeks, until 4/7, so I decided to post recipes which I cook every day on this blog. I hope this helps you to cook at home!
Day 1. Saltimbocca, Orecchiette with broccoli sauce and fennel salad.
Right after they announced the shelter-in-place, we went grocery shopping right across the street from our house, at Safeway. We don’t buy fresh produce often from Safeway since I usually go to Japanese grocery store, but since we are trying to avoid taking public transportation and not stay out too long, we decided to get everything local. Some of the items were sold out, like chicken stock, onion, vegetables, flour and eggs - but fresh vegetables, meat and frozen seafood were still available.
I found a package of milk fed veal scaloppini (surprisingly at Safeway!), a bulb of fennel, and orechiette pasta, so decided to cook these 3 dishes for tonight: saltimbocca, orecchiette with broccoli sauce, and fennel salad.

Directions
Pat veal dry with a paper towel.
Place veal on chopping board and cover with plastic wrap on top.
Using rolling pin, pound veal to make it thin.
Remove plastic wrap and sprinkle black pepper and small amount of salt on top of veal. (Don’t add to much salt since prosciutto also gives saltiness)
Place sage on top of veal and then one layer of prosciutto. Place veal on top. (Sandwich sage and prosciutto with veal)
Sprinkle flour around veal and pat gently to remove excess flour.
In a large pan, place butter and turn the heat to medium.
Cook veal on one side. Once the color of the veal changes, flip and wait until the bottom color changes.
Pour white wine and cook for 2 minutes.
Remove veal out from pan and place on a serving plate. Cook down the remaining sauce until it thickens.
Turn off heat, pour sauce over veal and serve. Buon apetito!
